Recipes For College Students: Skinny Tomato & Cheddar Toast

Do you ever get tired of the tasteless food on your diet? Had one too many packets of Ramen noodles? Those boring salads just get old after a while, don’t they? Well, I’m here to tell you that it is possible to eat healthy, and delicious. Skinny Tomato and Cheddar Toast is a spin on the old classic tomato and cheese melt, but with half the calories of the original. For all of you fellow college students out there, this recipe will provide you with a little variety when it comes to simple…and relatively budget-friendly cuisine. Feel free to change up this toast anyway you want, add some avocado, maybe a little freshly ground black pepper, a dollop of sour cream….whatever topping you want! You could also change up the cheeses, replace the sharp cheddar with pepper-jack, colby-jack, or mozzarella. There are plenty of options out there, you just have to be adventurous enough to try them! Don’t be afraid to try something new. Speaking of trying new things, is avocado toast any good? I’ve always been a bit suspicious of said food. The Chef: “Queenbee, how do you like your toast?” Queenbee: “Mmm…it’s good!” The Chef: “Do you like the tomato in little bits like that?” Queenbee: “Yes, you got that from me.” The Chef: “…plays celebratory music in head…(everyone says I look like my dad…)”  

The Ingredients: 1 slice oatmeal bread, 1/2 red tomato, 1 slice all natural sharp cheddar cheese, 1 tbsp. light mayonnaise.

Toast the bread in a toaster, toaster oven, or in an oven on broil to desired level of darkness. Spread the toasted bread with the light mayonnaise. Dice the tomato half into small pieces, arrange the tomato bits atop the mayo. Place the slice of cheese on a plate in your microwave for five to ten seconds or until partially melted. Top the tomato bits with the melty cheese. Serves 1. Enjoy!
