Low Sodium Recipes: Easy Cheese Grits for One

Ah, grits, there’s nothing like ’em. You’re not a true southerner if you don’t like grits. At least, that’s what my mama says.:) Some people say that you’re not a true southerner if you don’t make your grits from scratch, and at times this statement is true. But….for those mornings when you’re desperately trying to get out of the house, and all the while scouring your brain for a nutritious, low-calorie breakfast you can eat on the way out…instant grits are just the ticket. Someday soon I hope to try real grits, but for now, I’m sticking with the old faithful can of instant grits in our pantry. Let me know in the comments below what from-scratch grits taste like, I’m curious! Any-who, one morning not too long ago I was bored with my low-calorie options for breakfast, so I decided to create something off-menu and pray that it was still within my calorie range…..and it was! A miracle! Maybe I am learning something! Anyway, this recipe is for kids, teens, college students, adults, dieters, whoever! I guarantee you that if you make this, you will not be disappointed. 😉

The Ingredients: 2 cups water, 1/4 cup instant grits, 1/2 to 1 slice natural sharp cheddar cheese, 1 tbsp. butter (optional), 1/8 tsp. salt, freshly ground black pepper.

Add the water to a small pot. Bring to a boil. Add the grits and salt. Put a lid on the pot and cook the grits according to package directions, stirring occasionally. Remove from the heat. Add the remaining ingredients and stir to combine. Eat immediately.

Calories without butter: 133 calories for 1/2 cup cooked grits with 1/2 slice of cheese and black pepper.

Calories with butter:  233 calories for 1/2 cup cooked grits with butter, 1/2 slice of cheese, and black pepper.
