Spicy Spaghetti Casserole has found it’s way onto our weekly meal plans as of late, probably because it’s so easy to make, and so good to eat. This recipe is one of those mainstay meals you can pull out when you’re sick of everything else. This one never gets old. Another great thing about this recipe is that you can tailor it to suit your family’s needs. For example, you could use gluten-free pasta, homemade or low-sodium pasta sauce, maybe some Parmesan cheese instead of mozzarella; the options are endless. Just the other night this esteemed cooking team was trying to decide what to have for dinner, then Queenbee said, “that good spaghetti!”; the rest is history. On a completely different topic, are any of my fellow college students already tired of this round of classes, even though its only the second week!? I don’t think I’m gonna make it through this one, ya’ll. For those of you who are hilariously witty on paper, and awkwardly unusual in verbal communication, I get you, I really do. You never know just how weird you really are until you take Communications 101. That’s all.
Now onto the recipe!:)
The Ingredients: 1 lb. spaghetti noodles, 1 15 oz. can six cheese pasta sauce, 1 can Italian style diced tomatoes (drained), 1/2 cup water, 1/2 lb. lean ground turkey, 1 cup small curd cottage cheese, 2 cups part skim milk shredded mozzarella cheese, 1 tsp. Italian seasoning, 1/2 tsp. onion powder, 1/2 tsp. paprika, 1/4 tsp. ground cumin, 1/4 to 1/2 tsp. red pepper flakes (1/4 tsp. for a spicy meal, 1/2 tsp. for a really spicy meal ).
In the bowl of your slow cooker, add the pasta sauce, diced tomatoes, water, and spices. Put the lid on and let the sauce cook on high for one hour. Next, brown the ground turkey with desired seasonings until fully cooked. Add the cooked meat and cottage cheese to the sauce. Stir to combine and let sit while you cook the noodles. Cook the spaghetti to al dente. Drain and add the pasta to the crock-pot. Using a pair of tongs, toss the pasta and sauce together until fully combined. Sprinkle the mozzarella cheese generously over the top of the spaghetti. Reduce the heat to low and let the mixture sit on low for a half hour. When the time is up, serve while warm and enjoy! Serves 8-10.
