Skinny Lemon Parmesan Pasta is a low-calorie dish packed with zesty flavor! Parmesan cheese by itself provides a strong, delicious flavor, but, when you pair it with lemon juice…..BOOM! …..fireworks of awesomeness, explosions of flavor, and cannonballs of satisfaction! This dish is not for the faint of heart, so if you’re looking for adventure, you’ve come to the right place. Now, let me tell you how it all went down….It all started on a Sunday afternoon, there I was, performing a complex full-body workout (lying on the couch eating chocolate chips), and suddenly, it came to me in a vision (I found a recipe on Pinterest to modify), why not combine lemons…and Parmesan cheese….to create awesomeness (I browsed the pantry and fridge and saw that we needed to make a grocery run)! All joking aside, this is a really good pasta dish to make when you want a little change up from the classic tomato pastas. Ok, that’s all the panhandling I can come up with for the day, want to know why? Well, I’ll tell you. Please refer to the meme below for the answer to this question.

The Ingredients: 1 lb. of your favorite spaghetti noodles, 1 cup cooked pasta water, 1 1/4 cups evaporated milk, 1 cup grated mozzarella cheese, 1/2 cup freshly grated Parmesan cheese, 1/2 cup freshly grated Monterey jack cheese, 1/2 diced yellow onion, 1 tbsp. butter, 1 tbsp. olive oil, 1 tsp. garlic powder, 1 tsp. Italian seasoning, 1/2 tsp. sea salt, 1/2 tsp. onion powder, 1/2 tsp. poultry seasoning, 1/2 tsp. Lawry’s no salt sun-dried tomato seasoning, 1/4 tsp. freshly ground black pepper, 1 tsp. dried chives.

Cook the spaghetti noodles to al dente, reserve one cup of the cooking water, set both ingredients aside. In a large saucepan over medium heat, add the butter and olive oil. When the butter has melted, add the diced onion and cook until translucent. While the onion is cooking, whisk together all of the spices with the reserved cooked pasta water. Add the milk and spice-water mixture to the pan. Bring to a simmer. Add the cooked spaghetti noodles and cheese. Toss the pasta with tongs until the cheese has fully melted. Turn the heat off, sprinkle with the chives, and serve immediately. Serves 4-6. Enjoy!
