Remember that certain fast food restaurant….the one that serves the ultimate chicken sandwich? Eat More Chikin? Any of this ringing a bell? Igniting the memory lightbulb? Good. Now, this certain place is known not only for their sandwiches, milkshakes, and fries, but also for their AMAZINGLY HUGE chocolate chip cookies. I don’t know what else to say except WOW! The first time my family ever visited the aforementioned chicken paradise, we ordered a half dozen delicious chocolate chip cookies, without even knowing how good they were! Oh, how young we were, how naive to expect anything less than the best from this hallowed restaurant. So, in light of these beautiful memories, and my love for cookies, not to mention my little sister’s love for cookies….I give you my rendition of these beautiful, sacred, delicious, incomparable delights. I hope that you enjoy them, and that you and your family will enjoy many freshly baked cookies from this day forward.

What you need: 2 cups unbleached all purpose flour, 1 1/2 cups quick oats, 1 1/2 sticks softened butter, 1 cup brown sugar, 1/3 cup sugar, 2 eggs, 1 to 1 1/2 cups semi- sweet chocolate chips, 2 tsp. molasses, 1 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt.

Preheat your oven to 350 degrees. In a medium mixing bowl, whisk together the flour, oats, baking powder, baking soda, and salt. Set aside. In a large mixing bowl, using a hand mixer fitted with the beaters, beat together the butter and sugars. Add the eggs, mixing well after each addition. Add the molasses, mix well. Add half of the dry ingredients, mix until just combined. Add the remaining dry ingredients and fold them in with a rubber spatula. Add the chocolate chips, folding gently until just combined.

Using an ice cream scoop, divide the batter into twelve equal balls. Divide them equally between two foil lined baking sheets. Bake for ten minutes, turn off the heat and leave the cookies in the oven for an additional five to seven minutes. Makes one dozen jumbo cookies.;)
