Today I do not have a special, gourmet recipe to share. However, it is a delicious one. Spicy Taco Chicken Rice is easy, delicious, and one of those meals that you make when creativity is on a low swing, but your family is still hungry. These past few weeks have been very interesting, to say the least. It is at these times in a food blogger’s life that reality overtakes creativity. Reality is cruel, but it still exists. A slayer of dreams! A killer of creative juices! I promise that there will be more exotic and nutritious recipes in the future, but for now. Taco Chicken rice is for those of you who prefer convenience over gourmet-ness. We’ve all been there, and some of us stay there. It’s nothing to be ashamed of! Embrace your simplicity! Let it drive you! Because sometimes, simple is better. On that positive note! Let’s cook! This episode of Delicious Food 101 features The Chef and La Critico.
The Chef: “La Critico, those of us who know you have accepted that you harbor within your soul a dislike of rice products, and in light of that fact, wait with baited breath to hear your analysis of this rice dish.” La Critico: “This is actually a well-flavored rice slop.” The Chef: “I’ll take that as high praise, considering the aforementioned facts.”
The Ingredients: 2 cups prepared brown rice, 1/2 of a large rotisserie chicken, 1 10 oz. can condensed chicken soup, 1/2 cup rice water (the water you cooked the rice in), 1 12 oz. can of mixed vegetables (mine had potatoes, carrots, onions, etc.), 1-2 tbsp. spicy taco seasoning, 2-3 minced or pressed garlic cloves, 1/2 tsp. oregano, 1/2 tsp. cumin.
Set your crock pot to high heat, let it heat up for about ten minutes. While the crock pot is heating up, shred the rotisserie chicken with two forks or your hands. Save half of it for another meal. Toss the shredded chicken in the spices until well coated. Add the chicken and the remaining ingredients to your crock pot and stir well. Allow the dish to heat through for another ten minutes before serving.
It may not look like much, but you would not believe how much flavor there is in this simple dish! No one will ever know that it only took you twenty minutes to make it….:)
