If you’re grilling burgers for a fun dinner, pair them with Breaded Summer Squash Circles, which serve as a great, light substitute for french fries. Having made this for the first time, very recently, I can assure you that it does not even taste like you’re eating vegetables.;) That’s the funny thing, it is so good and good for you, but it doesn’t taste healthy! I don’t know about you, but that’s my kind of food. I’ve found that instead of making a fancy homemade breading, sometimes it’s better to take the easy way out and use the convenient ingredient below (or always, why mess with good things?).

The Ingredients: 2 zucchini, 2 yellow squash, 1 8 oz. pkg. Martha White Hush-puppy Mix, 1/2 cup of water, 1/2 cup of grape seed or vegetable oil.

Cut zucchini and yellow squash into 1/2 inch thick, diagonal slices. Add the hush-puppy mix and water to a small bowl, stir until combined. Add a few extra tablespoons of water if the mix seems overly thick. Add half of the oil to a large skillet over medium high heat. When the oil heats, coat all of the squash slices into the hush puppy mix, when the oil is lightly bubbling, add half of the coated squash to the skillet. Cook for about five minutes on each side or until they are golden brown. Transfer the first batch to a plate and repeat the frying process with the remaining squash. Serves 6-7 (as a side dish). Enjoy!
