The Ingredients: 4 medium-large potatoes, 3 bell peppers, 4 large carrots, 1 large yellow squash, 1 yellow onion, 1/4 cup olive oil, 1/2 tsp. cumin, 1/2 tsp. garlic powder, 1 tsp. Italian seasoning. Chop vegetables finely, combine in a large nonstick skillet with the olive oil. Cook for 15 minutes on medium-high heat. Add spices and cook for another 15 minutes or until the vegetables are soft and slightly browned.
It may not look like much, but the natural spices combined with the added ones make for an amazingly flavorful combination!
