Quesadillas are fairly new territory for me, they are not something that our family has had on a regular basis. However, that is all about to change. This evening I made Veggie Quesadillas with hoppin’ john rice, and everyone loved them! The average person does not have more than 20 to 30 minutes to make supper on a weekday, so this is a good, easy recipe that you can make in a short amount of time. Not only do these provide you with an easy way to get your serving of vegetables for the day, they will also make you a favorite when it’s your turn to make dinner!

The Ingredients: 10 small whole wheat tortillas, 2 bell peppers, 1/2 yellow onion, 3 carrots, 1 yellow squash, 2 zucchini, 1 cup grated cheddar cheese, olive oil, butter, 1/2 tsp. garlic, 1/2 tsp. cumin, 1/2 tsp. black pepper, 1 tsp. thyme.

Saute the vegetables with 3 tablespoons of olive oil on medium high heat for 15 minutes, stir in the spices and set aside. Put 2 tbsp. of cooked vegetables and a sprinkling of cheese in the center of each tortilla. Fold it over and cook two at a time in a large skillet with a tablespoon of butter per batch of quesadillas. Halve the cook quesadillas and serve warm with sour cream or guacamole.
