Each month I set out to conquer another type of homemade bread, this month it is muffins. The Blueberry muffins I posted last week ended up being kind of mediocre because I used a food processor instead of a mixer. However, THESE muffins, these are a TRIUMPH! They are fairly simple to make and absolutely delicious. If you need a quick, homemade bread product to go with your meal, these muffins are just the thing. All homemade muffins generally have the same base, so once you learn how to make that, anything is possible.;) Not only are they moist on the inside and soft on the outside, they have now won the prize as my newest comfort food (in the bread category).

The Ingredients: 1 1/2 to 2 cups of bran cereal (any flavor), 3/4 cup of vanilla almond milk, 1 cup of white whole wheat flour, 3/4 cup of dark brown sugar, 2 tbsp. butter (cut into chunks), 1 egg, 1/2 an apple (grated), 1/4 tsp. cinnamon, 1/8 tsp. nutmeg, 1/2 tsp. salt, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1 single serve cup of cinnamon applesauce.

Pour cereal and milk into the bowl of a Kitchen-aid mixer, let this mixture sit for 3 minutes. Add butter and brown sugar and mix on medium speed until combined. Now add the flour, cinnamon, salt, nutmeg, baking soda, baking powder, and the egg. Mix until smooth. Finally, add the applesauce and grated apple, mix on medium speed for 1-2 minutes. Taste the batter and add more of whatever you think it needs, or just leave it like it is! Bake at 350 degrees for 20-25 minutes. Butter the muffins and serve them while warm. Makes one dozen.

Now, do not be afraid, these do not look much different from the other muffins I made, but the two are like night and day (these being day).
